
Apple Cranberry Slaw

1 Apple (medium, diced)
1/4 cup Red Onion (diced)
1/2 cup Dried Unsweetened Cranberries
1/4 cup Pumpkin Seeds
1/2 tsp Celery Salt
3 cups Napa Cabbage (finely sliced)
2 tbsps Avocado Oil
1 tbsp Apple Cider Vinegar
1/2 tablespoon honey
Combine all ingredients in a large bowl and toss until well combined. Divide onto plates and enjoy!
This dressing and this method can be used with any hearty vegetable. The trick is to start with chunky nutritious vegetable - think broccoli, cabbage, Napa cabbage or kale. Add olive oil or avocado oil and a variety of sour (lemon, vinegar) and sweet (honey, maple syrup or fruit juice) flavors and textures. Apples and cranberries are both sweet and sour so they compliment the sweet dressing.
