Raw Peach Pie


I'm not technically a raw foodie, but I love the creativity that comes when you have to use nuts instead of flour. A nut crust is simply tastier than a flour crust!


  • 1 cup Pitted Dates (soaked for 1 hour and drained)

  • 1 1/2 cups Cashews (soaked for 1 hour and drained)

  • 1 cup Unsweetened Coconut Flakes

  • 8 Peaches (thinly sliced)

  • 2 tsps Cinnamon

  • 1 tbsp Maple Syrup

  1. Make your pie crust by combining cashews, coconut flakes and soaked dates in a food processor. Combine well, press mixture down firmly and evenly into the bottom of a pie plate.

  2. In a large mixing bowl, toss peach slices in cinnamon and maple syrup. Organize your peaches on top of the crust starting at the outside of the crust and working your way in and around.

  3. Serve the pie cold or room temperature. Enjoy!

This dessert is gluten free and grain free. The dates make it quite sweet, so you can reduce the amount of dates for a low sugar diets. Of course the ice cream is optional, or you can make your own coconut ice cream if dairy is a problem.


Peaches are full of antioxidants, vitamin C and beta- carotene for healthy skin. Vitamin C degrades in cooking so there are some benefits to raw peaches.


Cinnamon is helpful for blood sugar and is included in many supplements for blood sugar and diabetes - if you don't have time to make this pie simply sprinkle cinnamon on your peaches, apples, coffee and any cereal.
