What is Pizza to you? A thin crust with olives & pepperoni or artichoke & pesto? Here in Mendocino - Frankie's, Vinny's, Bernillo's, or your own pizza oven?
We can have fun with the word pizza, meaning anything you pick up with your hand that has toppings and a bit of Italian flare. One of my best Pizza's used soft potato slices brushed with anchovies over a thin layer of tomato on a gluten free biscuit crust. Food restrictions helped me discover a fabulous new creation that just happened to be gluten and dairy free. I can call it Pizza, or not.
Here are some quick pizzas using Portobello Mushrooms, Zucchini and Brown Rice Tortillas. If you have time and inspiration make a Margherita Pizza with your own Cauliflower Crust. Don't let the cauliflower scare you off. My freezer is stocked with Costco Cauliflower Crust Pizzas that are so good, my family prefers it to any wheat based frozen pizza.
You can enjoy these alternative pizzas for fun and variation or to avoid wheat gluten which can cause unpleasant symptoms in some people. I avoided wheat for over 25 years until I understood that I could actually heal my gut and enjoy Vinny's pizza occasionally.
